As part of our geography topic on Gambia, we went outside and had a typical Gambian meal. We took our shoes off and sat cross legged around the food pot. Boys and girls sat at separate pots. We said 'bismillah' and started eating with just our right hand (ask the children why) whilst listening to African Cora music.
Lots of children really enjoyed the Yassa and would like to eat it again. So here is the recipe which should feed about 6 people.
Chicken Yassa:
Ingredients:
6 Chicken breasts
400 g. sliced onion
150 g. butter
4 red peppers sliced
2 bay leaves, crushed black pepper corn
1 lemon, 3 tsp minced garlic, 3 tsp minced ginger
4 cl chicken stock, 1 tblsp vinegar
Basmati rice
Directions:
Saute sliced onions with garlic and ginger until soft and brown. Cut chicken into small cubes sprinkle with juice of lemon and salt. Saute chicken. Add onions and all other ingredients, cover and cook on a low fire until tender and juice well reduced. Dish up and garnish with sliced tomatoes and lemon. Put plain boiled basmati rice in a large bowl, make a well in the centre and spoon in the Yassa.
