Chicken Yassa

We are investigating the country of Gambia in our geography lessons.
In todays lesson we looked at the way a family meal would be conducted in West Africa.
Mr Chapman cooked two large bowls of chicken yassa and rice.
The boys and girls ate separately, all seated around a communal bowl.
Shoes were removed and we all said 'Bismillah' before eating.
Food was taken from the bowl with the right hand (you will have to ask the children why Gambians do not use their left hand for eating).
The children were delighted to find out that a small belch after eating is considered a compliment to the chef.


Chicken Yassa was a great hit with the children, so if you would like to try it at home here is the recipe.
3 chicken breasts
200g sliced onions
75g butter
2 red peppers sliced
a bay leaf
1 lemon
2 tsp minced garlic
2 tsp minced root ginger
4cl chicken stock
1 tblsp vinegar
Black pepper and salt
basmati rice

Fry onions with garlic and ginger until soft and brown, remove from pan. Cut chicken into small cubes, sprinkle with lemon juice and salt, pan fry until cooked through. Add the cooked onions, bay leaf, sliced red peppers, stock and vinegar to pan. Cover and simmer for half an hour. Meanwhile cook the basmati rice.
Put boiled basmati rice into a large bowl, make a well in the centre and spoon in the chicken yassa and juices.
Add a sprinkle of ground black pepper and serve.
